Red onion

Step 1

Peel & finely slice the onion.

Zucchini

Step 2

Wash, trim & dice the zucchini.

Heat a drizzle of oil in pan over medium heat. Add the onion, zucchini & grated or crushed garlic. Season with salt & pepper. Cook, stirring for 3-5 min.

Pasta (tagliatelle dry)

Step 4

Cook the pasta according to the package instructions. Reserve a bit of the pasta cooking liquid. Drain the pasta. Stir the pasta cooking liquid into the pan of veggies.

Step 5

Add the pasta to the pan. Toss it all together. Remove from heat.

Goat cheese
Parsley (fresh)

Step 6

Serve the pasta in bowls topped with creamy goat cheese. Garnish with chopped parsley (optional). Season with salt & pepper. Add a final drizzle of olive oil. Enjoy!
