Oven, Skewers, Parchment paper, Sheet Tray, Knife
Step 1
Preheat the oven to 425°F. Peel & quarter the onion, separating the petals.
Step 2
Wash & cut the zucchini into rounds. Wash the baby tomatoes.
Step 3
Slide the zucchini, cherry tomato & onion onto the skewers. Continue alternating & repeating until all the skewers are full.
Step 4
Place the skewers on a parchment-lined baking sheet. Season with salt & pepper. Drizzle with olive oil. Add a pinch of oregano. Roast for 20 min.
Step 5
Cook or soak the couscous according to the package instructions.
Step 6
Remove the skewers from the oven.
Step 7
Serve the skewers over the fluffed couscous. Add a dollop of Greek yogurt alongside. Season with salt & pepper. Enjoy!
