Baby bella mushrooms (whole)

Step 1

Clean & thinly slice the mushrooms.

Bell pepper (assorted)

Step 2

Halve the peppers & remove the seeds. Thinly slice.

Red onion

Step 3

Peel & thinly slice the red onion.

Olive oil

Step 4

Heat a drizzle of oil in a pan over medium heat. Add the mushrooms, bell peppers & red onion. Season with your favorite spices like chili powder, cumin, salt & pepper. Stir & cook for 7-8 min or until the veggies have lightly browned & softened.

Flour tortilla (large)
Pepper Jack cheese (shredded)

Step 5

Remove the veggies from the pan & set aside. Wipe out the pan. Add the tortilla & assemble the quesadilla: Add half of the cheese onto one half of the tortilla. Add the cooked veggies, then top with the remaining cheese. Fold the tortilla in half. Cook for 3-4 min on medium heat until golden.

Step 6

Flip the quesadilla & cook for another 3-4 min.

Sour cream
Salsa

Step 7

Remove the quesadilla from the pan & cut into 3 pieces. Serve with sour cream & salsa. Enjoy!
