Clean & slice the mushrooms.
Peel & mince the shallot.
Heat a drizzle of oil in a small pot over medium heat. Add the shallot. Sauté for 2 min.
Add the mushrooms. Cook, stirring for 2 min.
Add the chicken stock & bring to a boil. Reduce the heat to low, cover & simmer for 10 min.
Add the tortellini. Cook for 2 min, or until the tortellini float to the surface.
Serve the soup garnished with fresh parsley (optional) & a drizzle of olive oil. Enjoy!
