Take a trip to Texas with these Migas tacos! Who knew that eggs cooked up with toasted tortilla strips was such an elite comfort food!?
Make sure you have...
Knife, Stovetop, Frying pan
Step 1
Wash the pepper & remove the seeds. Small dice the pepper.
Step 2
Peel & small dice the onion.
Step 3
Wash & finely chop the cilantro (optional).
Step 4
Crack the eggs in a bowl. Add the salsa, salt & pepper. Whisk it all together.
Step 5
Heat a non-stick pan over medium heat. Add 1 tortilla per serving & brown each side for 1-2 min. Transfer the tortilla to a cutting board & cut into 2 inch pieces.
Step 6
Heat a drizzle of oil in the same pan over medium heat. Add the cut tortillas. Stir & cook for 1-2 min, until lightly fried.
Step 7
Stir in the peppers, onions & cilantro (optional). Cook for 2-3 min until softened.
Step 8
Pour in the egg mixture. Gently scramble the eggs & veggies together until big soft curds have formed. Remove from the heat.
Step 9
Distribute the scramble onto each remaining tortilla. Top with freshly sliced avocado & grated queso fresco cheese. Serve & enjoy!
