Fajita kit

Step 1

Empty the contents of the fajita kit.

Chicken breast

Step 2

Pat the chicken dry with a paper towel. Cut the chicken into thin strips.

Olive oil

Step 3

Heat a drizzle of oil in a pan over medium-high heat. Add the chicken & the spice mix from the kit. Sauté over medium heat for 5-7 min, until fully cooked.

Kidney beans (canned)
Corn (canned)

Step 4

When the chicken is browned, add corn & beans. Add salt & pepper to taste. Stir, cover & cook for 2-3 min.

Avocado

Step 5

In a small bowl, add avocado & mash with a fork. Season with salt & pepper. (optional: add a squeeze of lemon or lime juice) & mix.

Step 6

Uncover the pan, stir & remove from heat.

Fajita kit
Cilantro (fresh)

Step 7

Spread mashed avocado on the tortillas (2 per person). Top with the chicken mixture & drizzle with the sauce from the kit. Garnish with fresh cilantro. Serve & enjoy!
