Stovetop, Pot (small)
In a pot or microwave, bring vegetable broth to a boil.
In a bowl, mix the dry couscous with olive oil.
Pour the hot vegetable broth over the couscous until it's just covered. Cover the bowl with a plate. Let sit for 5 minutes to absorb the broth.
Meanwhile, wash & dice the cucumber.
Toast the sliced almonds in a small pan over low heat for 3 minutes, stirring constantly.
Chop the parsley.
Fluff couscous with a fork. Mix it together with the cucumber, raisins, almonds & parsley (optional).
Add lemon juice & zest. Season with salt & pepper. Top with a drizzle of olive oil. Enjoy!
