Jasmine rice

Step 1

Cook the rice according to package instructions.

Bell pepper (red)

Step 2

Wash the pepper, remove the seeds & dice.

Green onion (scallions)

Step 3

Rinse & thinly slice the green onion.

Ground pork

Step 4

Season the pork with salt & pepper. Mix it all together with your hands or a spoon.

Step 5

Break off about 1.5 tbsp of meat & roll into a ball. Repeat until the meat is all used.

Olive oil
Ground pork

Step 6

Heat a drizzle oil in a pan over medium-high heat. Add the meatballs & brown on all sides for 5-6 min.

Step 7

Add the bell pepper & green onion to the pan. Stir, cover & cook for 4-5 min.

Pineapple (canned)
Ketchup
Apple cider vinegar

Step 8

Uncover & stir. Mix in apple cider vinegar, pineapple chunks & ketchup. Season with salt & pepper. Mix until well-combined.

Jasmine rice

Step 9

Fluff the cooked rice with a fork.

Green onion (scallions)

Step 10

Serve the saucy meatballs over a fluffy bed of rice. Garnish with more green onion & enjoy!
