Step 1
Thinly slice the garlic.
Step 2
Heat a drizzle of oil in a pot over medium heat. Add the garlic.
Step 3
Cook the garlic for 3 min, or until golden brown.
Step 4
Peel & dice the onion.
Step 5
In a small bowl, whisk together the cayenne & a healthy drizzle of oil. Set aside.
Step 6
Add the onion to the pot with the garlic. Cook for 1 min.
Step 7
Add the chicken stock, chicken breast & rice to the pot.
Step 8
Cover & cook for 15-20 min, or until the rice & chicken are cooked through. Add a splash of water if needed.
Step 9
Remove the chicken from the soup. Shred it into pieces.
Step 10
Add the shredded chicken back to the soup. Add the spinach. Season with salt, pepper & and any seasonings of your liking (we suggest garlic powder & onion powder!). Simmer for 1 min.
Step 11
Serve the soup with your chili oil (optional).
Step 12
Garnish with fresh parsley & an extra pinch of cayenne (optional). Enjoy!
