Burger night is on a whole new level with this juicy shroom burger!
Make sure you have...
Oven, Stovetop, Knife
Step 1
Preheat the oven to 450°F. Clean & cut potatoes into long wedges, (peeling is optional).
Step 2
Peel & slice the onion into ¼ inch half-moons.
Step 3
Line a sheet tray with parchment paper. Arrange potato wedges on 1 side of the tray in an even layer. Place cleaned mushroom caps on the other side. Drizzle olive oil over the potatoes & mushrooms. Season generously with salt & pepper. Toss to combine. Bake in the oven for 10 min.
Step 4
Meanwhile, heat a drizzle of oil in a pan over medium heat. Add the onions & sauté. Stir frequently for about 10 min. Use the lid to speed up the process. Cover, uncover & stir. Add a splash of water to deglaze the bottom of the pan as needed. Set aside once nicely caramelized.
Step 5
Remove the tray from the oven & flip the potato wedges. Flip the mushroom caps & return to the oven for 10 more min.
Step 6
Remove the tray from the oven & place a slice of cheese on top of each mushroom cap. Return to the oven for 2 more min to melt the cheese.
Step 7
Assemble the burger! On the bottom half of the bun, add spicy mayo, lettuce, shroom burger, onions & close the bun. Serve with crispy potato wedges. Enjoy!
