Shrimp, Avocado & Grapefruit Salad

Shrimp (cooked)

Step 1

Heat a drizzle of olive oil in a pan over medium heat. Add the cooked shrimp & garlic (crushed or minced).

Step 2

Cook for 4 min, stirring frequently. Remove from heat.


Step 3

Cut avocado into thin slices.


Step 4

Cut off the ends of the grapefruit. Then slice off the peel & pith. Remove each section of pulp with a knife. If necessary, remove the seeds. Set wedges aside.


Step 5

To make the dressing, squeeze the juice from remaining grapefruit into a bowl. Add a drizzle of olive oil, salt & pepper. Mix well.

Shrimp (cooked)
Cilantro (fresh)
Spinach (fresh)

Step 6

Toss the greens with the dressing. Add the shrimp. Then add the avocado & grapefruit slices. Garnish with fresh cilantro (optional). Enjoy!
