Step 1

Wash & halve the cherry tomatoes.

Heat a drizzle of oil in a pan over medium heat. Add the tomatoes. Cook, stirring for 2 min.

Milk (whole)

Step 3

Bring the milk to a gentle boil in a small pot.

Garlic

Step 4

Mince the garlic.

Add the garlic & shrimp to the pan with the tomatoes.

White wine

Add the white wine to the pan (optional).

Crush the tomatoes gently as you stir the ingredients together. Reduce the heat to low, cover & simmer.

Polenta
Milk (whole)

Step 8

Add the polenta to the boiling milk. Whisk constantly until the polenta is smooth & creamy. Adjust the liquid as needed.

Parmesan (grated)

Step 9

Season the polenta with salt & pepper. Add the grated parmesan cheese. Stir to combine.

Serve the polenta topped with the shrimp & tomato sauce. Garnish with fresh basil (optional). Enjoy!
