Scallops (frozen)

Step 1

Defrost frozen scallops beforehand.

Broccoli (fresh)

Step 2

Wash, peel & cube the potato. Wash & chop the broccoli into florets.

Step 3

Add the potato cubes to a pot of salted boiling water. Cook for 5 min. Add the broccoli & cook both together for 10 min, or until fork-tender.

Cheddar (shredded)

Step 4

Drain the vegetables. Mash them with a fork or potato masher. Add the cheddar cheese, salt & pepper. Stir until smooth & creamy.

Scallops (frozen)

Step 5

Heat a drizzle of oil in a pan over medium heat. Add the scallops. Season with salt & pepper. Cook for 2 min on each side, or until cooked through.

Step 6

Spoon the mashed broccoli-potatoes onto a serving plate. Top with the scallops. Enjoy!
