Step 1

Heat the oven to 475°F. Cut the onion into thin slices.

Fennel (bulb)

Step 2

Core the fennel & cut the remaining root into thin slices.

Italian pork sausage links (mild)

Step 3

Slice the sausage into 1/2 inch pieces.

Step 4

Line a baking sheet with parchment. Arrange the sausage, onion & fennel slices on the baking sheet. Season with olive oil, salt & pepper. Stir to combine, then bake for 15 minutes.

Step 6

Add the pasta, sausage & fennel to a bowl. Top with parmesan & arugula. Season with salt & pepper. Enjoy!
