Soy sauce flavors the salmon & mushrooms in this comforting rice bowl

Step 1
If using frozen salmon, defrost in the refrigerator overnight or according to package directions. Preheat the oven to 400°F. Clean and trim the mushrooms. Then cut them in half.
Step 2
Place the mushrooms in an oven-proof baking dish or on a baking sheet. Add 1 tsp sesame or vegetable oil, minced garlic or ginger, ground black pepper to taste & 1 tbsp of soy sauce. Mix well & bake for 8 minutes.
Step 3
Cook the rice according to package directions.
Step 4
Remove mushrooms from the oven. Lay the salmon fillet over the baked mushrooms, season with more ground black pepper & remaining soy sauce. Drizzle with 1 tsp of oil. Bake the salmon & mushrooms for 12 minutes.
Step 5
Remove rice from the heat & fluff with a fork.
Step 6
Remove the salmon & mushrooms from the oven. Serve them over the rice, garnished with cilantro or scallions (optional). Enjoy!
