Step 1

Preheat the oven to 425°F. Wash, seed & dice the bell pepper. Peel & finely chop the onion.

Heat a drizzle of olive oil in a pan over medium-high heat. Add the bell pepper & onion. Cook for 5 min, stirring frequently.

Parsley (fresh)

Step 3

Crack the egg into a bowl. Season with salt & pepper. Add chopped parsley (optional). Then whisk to combine.

Step 4

Remove vegetables from the heat, transfer them to a greased round baking pan.

Ricotta cheese

Step 5

Pour the eggs over the vegetables. Arrange dabs of ricotta over top. Bake for 10-15 min. Cool for a bit before slicing. Enjoy!
