Step 1

Peel & mince the onion.

Carrots (fresh)

Peel & dice the carrot. Peel & mince the garlic.

Heat a drizzle of oil in a pot over medium heat. Add the onion, carrot & garlic.

Cook, stirring for 2 min.

Curry powder

Season with salt & pepper. Add the curry powder & stir.

Red lentils (dry)

Add the lentils & enough water to cover. Reduce the heat to low, cover & simmer for 10-15 min, stirring occasionally.

Basmati rice

Step 7

Meanwhile, cook the rice according to the package instructions.

Tomato sauce
Coconut milk

Step 8

Add the tomatoes & coconut milk to the lentils. Season with salt & pepper. Stir to combine.

Cilantro (fresh)

Step 9

Serve the saucy lentils over the fluffy rice. Garnish with a splash of coconut milk & fresh cilantro (optional). Enjoy!
