Yellow onion

Step 1

Peel & mince the onion.

Carrots (fresh)

Step 2

Peel & dice the carrot. Peel & mince the garlic.

Heat a drizzle of oil in a pot over medium heat. Add the onion, carrot & garlic.

Cook, stirring for 2 min.

Curry powder

Step 5

Add the curry powder & cook for 1 min.

Red lentils (dry)

Step 6

Add the lentils & enough water to cover. Reduce the heat to low, cover & simmer for 15 min, stirring occasionally.

White rice

Step 7

Meanwhile, cook the rice according to the package instructions.

Tomatoes (crushed)
Coconut milk (canned)

Step 8

Add the tomatoes & coconut milk to the lentils. Season with salt & pepper to taste. Stir to combine.

Cilantro (fresh)

Step 9

Serve the lentils over the rice. Garnish with coconut milk & fresh cilantro (optional). Enjoy!
