Make sure you have...
Stovetop, Knife
Step 1
Cook the quinoa according to package instructions. (Use pre-cooked quinoa or day-old quinoa to speed up the process!)
Step 2
Slice ginger into thin strips. (Pro-tip, use a peeler or spoon to peel the skin. Or skip peeling all together if the ginger is super fresh with thin skin!)
Step 3
Fluff quinoa & set aside.
Step 4
Heat a drizzle of oil in a fry pan over medium-high heat. Add the frozen veggies, stir & cook until thawed, about 3-4 min.
Step 5
Add in sliced ginger & stir-fry 2 more min.
Step 6
Add cooked quinoa to the pan along with teriyaki sauce. Stir-fry 4-5 min until everything is well combined.
Step 7
Serve hot, garnished with a sprinkle of toasted sesame seeds if you have. Add some heat with a drizzle of sriracha & enjoy!
