Step 1
Cook the pasta according to the package instructions. Rinse under cold water. Drain & set aside.

Step 2
Heat a drizzle of oil in a pan over medium-high heat. Add the cherry tomatoes. Cover & cook for 1-2 min, shaking the pan halfway through cooking.




Step 3
Add the drained pasta to a serving bowl. Top with cherry tomatoes, arugula, a squeeze of lemon & a drizzle of oil. Season with salt & pepper. Toss it all together.


Step 4
Serve the salad topped with slices of prosciutto, lemon zest & another drizzle of olive oil. Season with salt & pepper. Enjoy!
