Preheat the oven to 425°F. Wash & cut the zucchini into long strips using a vegetable peeler.
Spread the pizza dough onto a parchment-lined baking sheet. Smear the pesto over the dough, leaving a border around the edges.
Arrange the zucchini over the pesto. Top with torn pieces of mozzarella. Add a drizzle of olive oil, salt & pepper. Bake for 15 min, or until golden brown.
Remove from the oven. Sprinkle fresh spinach over top. Mangia!
