Make sure you have...
Stovetop, Pot (small), Knife
Step 1
Peel & dice the onion.
Step 2
Heat a drizzle of oil in pot over medium heat & add the ground sausage. Break up the meat with a spatula & cook until slightly browned, about 4-5 min. Use a slotted spoon to transfer the meat to plate, reserving the fat in the pot.
Step 3
In the same pot, add the diced onion. Stir & cook until translucent, about 2-3 min. Add a splash of water to deglaze the pan then stir again.
Step 4
Stir in the pesto & mix it all together. Add back the cooked meat, then the tortellini & broth. Allow everything to simmer for 8-10 min, until the tortellini is al dente or cooked to your liking!
Step 5
Turn off the heat & stir in a bit of shredded parmesan for extra creaminess. Sprinkle some crushed pepper flakes on top, serve & enjoy!
