Rice

Step 1

Cook the rice according to package instructions.

Red onion

Step 2

Mince the onion & set aside.

Chicken breast

Step 3

Cut the chicken into cubes & slide the pieces onto wooden skewers.

Step 4

Heat a drizzle of oil in a pan over medium heat. Add the onion & cook, stirring for 2 minutes. Add the chicken skewers. Cook for 2 minutes, then turn over the skewers.

Coconut milk
Peanut butter
Cayenne pepper

Step 5

Add coconut milk, peanut butter & cayenne to the pan. Season with salt & pepper. Stir to combine. Cover, reduce heat to medium-low & cook until the chicken is cooked through.

Step 6

Serve chicken skewers over the rice. Pour the peanut-coconut sauce over top. Garnish with chopped peanuts & cilantro leaves (optional). Dig in!
