Homemade pesto & buffalo mozzarella...Yes & yes!
Stovetop, Blender, Pot (small), Colander, Frying pan
Step 1
Cook the pasta according to the package instructions. Reserve a bit of the cooking liquid.
Step 2
In a blender or food processor, combine the pine nuts, basil leaves, peeled garlic clove, olive oil & a pinch of salt. Blend until you have pesto!
Step 3
Heat another drizzle of olive oil in a pan over medium-high heat. Wash the cherry tomatoes & add them to the pan. Cook, stirring for 2-3 min.
Step 4
Add the pasta & a little bit of cooking liquid to the pan. Stir together. Then add the pesto. Cook, stirring for 1-2 min.
Step 5
Serve the pesto pasta topped with torn pieces of mozzarella & a drizzle of olive oil. Season with salt & pepper. Garnish with basil leaves (optional). Mangia!
