Step 1
Preheat the oven to 400°F. Clean & slice the potatoes into thin rounds.
Step 2
Line a sheet tray with parchment paper. Add the potato rounds to half of the tray in an even layer. Season with salt, pepper, thyme & a drizzle of olive oil. Roast in the oven for 10 min at 400°F.
Step 3
Meanwhile, wash & cut the broccoli into florets.
Step 4
After 15 min, remove the tray from the oven. Pat the pork dry with a paper towel & add it to the empty half of the tray. Spread mustard over the pork & add the broccoli florets. Season with salt, pepper, thyme & a drizzle of olive oil. Return everything to the oven for another 25-30 min, or until the pork is fully cooked.
Step 5
Remove the baking dish from the oven & transfer the meat to a cutting board. Rest the pork for a few min before slicing into rounds.
Step 6
Serve the sliced mustard pork loin with a side of crispy potatoes & broccoli. Season to taste & enjoy!
