Couscous

Step 1

Boil water in pot or kettle. When done, combine couscous & water in equal parts. Stir, cover & set aside.

Beef (ground)
Cumin (ground)
Mint (fresh)
Shallot

Step 2

Chop the mint & shallots. In a large bowl, mix together the ground beef, spices, half of the mint, most of the shallot. Season with salt & pepper.

Step 3

For Moroccan flare, add a pinch each of allspice, cumin, paprika & garlic (optional).

Form the mixture into oblong meatballs. Or, if you want to be extra authentic, pack each oblong meatball around one end of a skewer.

Heat a pan over medium-high heat, add the meatballs or skewered meatballs. Cook for 2 minutes on each side, or until golden brown & cooked through.

Greek yogurt
Lemon (juice)

Step 6

Meanwhile, combine the yogurt & lemon juice with the remaining mint & shallot. Season with salt & pepper. Stir together.

Step 7

Serve the meat skewers over the couscous. Drizzle with yogurt dressing. Enjoy!
