Step 1
Preheat the oven to 425°F. In a small bowl, combine softened butter, miso paste & a 1/2 tbsp of water. Whisk to form a paste.

Cook rice according to package instructions.

Step 3
Clean & halve the bok choy.

Step 4
Clean the mushrooms if needed & remove the woody stems. Thinly slice.

Step 5
Peel & mince the garlic.



Step 6
In a large piece of parchment paper, add bok choy. Place the cod on top. Spread miso butter on the cod. Top with minced garlic & shiitake mushrooms. Add a 1/2 tbsp of water.
Step 7
Fold the parchment paper in half over the cod. Continue folding down the sides until a tightly sealed pouch is formed. Set the pouch on a sheet tray. Bake in the oven at 425°F for 20 min.

Step 8
Fluff the cooked rice with a fork.
Step 9
Remove from the oven. Carefully open the packets & serve with fluffed rice. Enjoy!
