This simple vegetarian curry is packed with complex & delicious flavors!

Stovetop, Pot (small), Colander, Knife

Step 1
Rinse the lentils. Cook them according to the package instructions.

Step 2
If needed, cut the roasted peppers into thin strips.



Step 3
Once the lentils are cooked, add the peppers, coconut milk & curry powder. Season with salt & pepper. Reduce the heat to low. Cover & simmer for 5 min.


Step 4
Garnish with chopped cilantro & a squeeze of lime (optional). Season with salt & pepper. Serve & enjoy!
