Lentils (dry)

Step 1

Rinse the lentils. Cook them according to the package instructions.

Roasted bell peppers

Step 2

If needed, cut the roasted peppers into thin strips.

Coconut milk (full fat)
Curry powder

Step 3

Once the lentils are cooked, add the peppers, coconut milk & curry powder. Season with salt & pepper. Reduce the heat to low. Cover & simmer for 5 min.

Cilantro (fresh)
Lime

Step 4

Garnish with chopped cilantro & a squeeze of lime (optional). Season with salt & pepper. Serve & enjoy!
