Lemon Salmon Skewers

Step 1

Preheat the oven to 400°F. Remove the salmon's skin (if needed).

Cut the fish into skewer-sized pieces.


Step 3

Thinly slice the lemon.

Slide the salmon & lemon onto skewers. Alternating between salmon & lemon. Fold the lemon wheels in half as you go.

Step 5

Place the skewers on a greased or parchment lined baking sheet. Season with salt, pepper & olive oil. Bake for 5 minutes, or until cooked through.

Vegetable bouillon (cube)

Step 6

Boil 1/4 cup of water (per person). Whisk the veggie stock cube into the hot water until dissolved.


Step 7

Put the couscous in a bowl & pour over the boiling water. Cover & set aside for 5 minutes, or until it has absorbed all the water.

Step 8

Serve the salmon skewers over the couscous. Enjoy!
