Step 1
Slice the sausage.
Step 2
Rinse & thinly slice the scallion. Separate the white & green slices.
Step 3
Heat a drizzle of oil in a skillet over medium-high heat. Add the sausage & cook for 2 min per side until nicely browned.
Step 4
Add in the white scallions, rice, cajun seasoning & diced tomatoes (if you want this dish spicier, add a bit more cajun seasoning to your liking!) Stir & cook for 2 min.
Step 5
Stir in broth & frozen mixed veggies until everything is combined.
Step 6
Nestle the shrimp into the sauce mixture. Cover & reduce the heat. Simmer for 15-20 min, or until the rice & shrimp are fully cooked.
Step 7
Remove the lid & give everything a stir! Serve hot with green scallion slices! Enjoy!
Jambalaya is a flavorful dish and can take on a lot of seasoning! Try adding in some dried oregano thyme & bay leaves to add even more pizzazz! A splash of hot sauce can also go a long way in this recipe!
