Oven, Stovetop, Sheet Tray, Pot (small), Knife
Step 1
Preheat the oven to 425ºF. Cut off the stem of the bell pepper & remove the seeds inside. Coat the bell pepper with a drizzle of olive oil. Place the pepper onto a parchment paper lined sheet tray. Roast for 10-15 min.
Step 2
Meanwhile, in a pot of boiling, salted water, cook the orzo according to package directions. Drain the pasta & mix half of the marinara sauce with the orzo.
Step 3
Heat a drizzle of oil in a frying pan over medium-high heat. Add the ground beef & season with salt & pepper. Stir & cook for 5-7 min or until the ground beef is browned.
Step 4
Add the remaining marinara sauce & spinach. Cook for 2-3 min until the spinach wilts. Add the orzo into the pan & stir everything together.
Step 5
Remove the bell pepper from the oven & stuff with the beef mixture. If there's extra, save the remaining mixture for serving. Top with mozzarella cheese & place in the oven. Bake for 5-8 min or until the cheese is melty.
Step 6
Serve topped with parmesan cheese & enjoy!
