Stuffed peppers are a wonderful dish, adapted across many cultures!
Knife, Oven, Sheet Tray, Baking dish
Step 1
Preheat the oven to 400°F. Wash the pepper & slice off the top. Clean out the seeds from the center. Transfer the pepper to a baking dish & roast for 15 min.
Step 2
Heat a drizzle of olive oil in a pan over medium-high heat. Add the ground beef. Stir & cook, breaking up the meat with the spatula. Cook until it's no longer pink, about 3-4 min. Season with salt, pepper & oregano. Mix it all together.
Step 3
Reduce the heat & stir in the fire roasted tomatoes. Add drained & rinsed chickpeas along with the pre-cooked quinoa. Mix it all together.
Step 4
Reduce the heat & add in most of the feta leaving a bit for garnish. Stir gently then remove from the heat.
Step 5
Remove the peppers from the oven & carefully spoon in the meat mixture until the pepper is fully stuffed. Cover the baking dish with foil & return to the oven for 5-10 more min.
Step 6
Remove the peppers from the oven & serve on a plate topped with more cheese. Garnish with fresh herbs like dill (optional) or parsley if you have any! Enjoy.
