Step 1
Preheat the oven to 400°F. In a small bowl, whisk together the honey, mustard, soy sauce & a drizzle of olive oil. Add grated or crushed garlic. Season with salt & pepper.
Step 2
Coat the tenderloin in the honey-mustard sauce. Set it aside to marinate while you prepare the potatoes.
Step 3
Wash & cube the potatoes.
Step 4
Add the potatoes to a baking dish. Top with a drizzle of olive oil. Season with salt & pepper. Mix it all together. Bake for 15 min at 400°F.
Step 5
Remove the potatoes from the oven & stir. Arrange the pork tenderloin over top the potatoes. Pour any remaining marinade over the pork. Add a drizzle of olive oil. Bake for another 20-25 min at 400°F, or until the meat is cooked to your liking.
Step 6
Remove from the oven. Serve & enjoy!
