Whole grain mustard
Maple syrup
Soy sauce
Olive oil
Pork (tenderloin)

Step 1

In a bowl, combine whole grain mustard, maple syrup, soy sauce & 1 tbsp of olive oil per serving. Whisk well to combine. Add the pork tenderloin to a zip lock bag or large enough Tupperware. Pour in the marinade and coat the meat. Allow the pork to marinate for 30 min or up to 1 day in the refrigerator before roasting.

Potato

Step 2

Preheat the oven to 400°F. Clean & slice the potatoes into thin rounds.

Thyme (dried)

Step 3

As the meat marinates, line a sheet tray with parchment paper. Add the potato rounds to half of the tray in an even layer. Season with salt, pepper, thyme & a drizzle of olive oil. Roast in the oven for 10 min at 400°F.

Broccoli (fresh)

Step 4

As the potatoes cook, wash & cut the broccoli into florets. After 10 min, remove the tray with potatoes from the oven & flip each slice over.

Step 5

Remove the pork from its marinade & arrange it on the other half of the sheet tray. Add in the broccoli florets. Season with salt, pepper, thyme & a drizzle of olive oil. Return everything to the oven for another 25-30 min, or until the pork is fully cooked (internal temp reaches 145°F).

Step 6

Remove the tray from the oven & transfer the meat to a cutting board. Rest the pork for a few min before slicing into rounds.

Step 7

Serve the sliced pork loin with a side of crispy potatoes & broccoli. Season to taste & enjoy!
