Step 1

In a pot of boiling water, cook 1 egg for 10 min. Carefully remove the egg & place in an ice bath to cool for 10 min. Peel the egg.

Step 2

In a small bowl, take the second egg & separate the yolk from the white. Save the egg white for an omelette or another recipe :-)

Garlic
Apple cider vinegar
Lemon
Parmesan (grated)
Anchovies

Step 3

In a food processor, add the egg yolk, cooked egg, garlic, apple cider vinegar, parmesan, juice of one lemon & anchovy (optional). Blend until smooth.

Vegetable oil

Step 4

With the food processor running on low, add the oil in a continuous stream. The mixture should be smooth & creamy. Season to taste with salt & pepper. Enjoy!
