What's more nostalgic than a bowl of pasta with sauce?! This one even has hidden veggies for extra nutrition!

Blender, Immersion blender, Pot (large), Frying pan, Food processor, Knife
Step 1
Peel & dice the carrots.
Step 2
Rinse & dice the zucchini.
Step 3
Wash the bell pepper & cut around the seeds. Dice the pepper.
Step 4
Peel & dice the onion.
Step 5
Heat a drizzle of oil in a pan over medium-high heat. Add all the veggies with a pinch of salt. Stir & cover the pan to allow the veggies to steam for about 3-4 min until slightly softened. Uncover & add oregano. We love garlic powder here too! Stir & cook for 2-3 more min.
Step 6
Add the crushed tomatoes & stir it all together. Simmer for 5 more min the remove from the heat. As it simmers, boil a pot of water.
Step 7
Season the boiling water with salt. Add the pasta & cook according to package instructions.
Step 8
As the pasta cooks, add all the veggies to a food processor or blender & purée until smooth. Add a ladle of the pasta cooking water to thin it out if needed.
Step 9
Drain the pasta & add it back to the pot. Stir in the veggie sauce. If you have any parmesan cheese at home, grate that in along with some red pepper flakes for a nice kick! Serve & enjoy!
