Be sure to follow the pie crust package instructions! Preheat the oven to 400°F. Defrost the frozen spinach in the microwave or in a small pot.
In a mixing bowl, whisk together the eggs, sour cream, salt & pepper. Reserve a third of the goat cheese for garnish. Cut the rest of the goat cheese into the mixing bowl. Add the spinach to the bowl. Whisk to combine.
Lay the pie dough in a parchment-lined tart or pie pan. Pierce it several times with a fork. Pre-bake it for 5 min, or according to the pie crust instructions. Remove from the oven & set aside.
Pour the filling into the pie crust. Cut the reserved goat cheese into thin rounds. Arrange the cheese over the quiche. Season with salt & pepper. Bake for 35 min at 400°F, or until the filling has set. Let the quiche cool slightly before slicing. Enjoy!
