Deconstructed egg roll - a delicious twist on a takeout favorite!

Step 1
Wash & thinly slice the scallions.
Step 2
Heat a drizzle of oil in a frying pan over medium heat. Add the ground pork & cook, stirring often, until the meat is browned & cooked through, 4-5 min. (If there is excess fat, drain & discard.)
Step 3
Add the coleslaw mix to the pork. Cook, stirring often, until the cabbage starts to wilt, 4-5 more min. Add the soy sauce & sesame oil. Grate in the fresh ginger & toss to combine. Season to taste with salt & pepper. Cook for 1-2 min, then turn off the heat.
Step 4
If serving with rice, heat the rice according to package directions.
Step 5
Serve the pork mixture on its own or with rice (optional). Sprinkle with scallions. Garnish with a drizzle of sriracha sauce & fresh cilantro (both optional). Enjoy!
