Curried Feta & Zucchini Cigars

Stovetop, Frying pan, Brush



Step 1

Wash the zucchini & cut off the ends. Chop the zucchini into cubes.

Curry powder

Step 2

Heat a drizzle of olive oil in a pan over medium-high heat. Add the zucchini, salt, pepper & curry powder. Mix well.

Step 3

Cook for 5 min, stirring frequently.

Greek yogurt

Step 4

Meanwhile, make the yogurt sauce. Combine the Greek yogurt, a drizzle of olive oil, salt, pepper & minced or crushed garlic in a small bowl. Stir & set aside.

Feta cheese

Step 5

Once the zucchini is browned & the moisture is cooked off, remove it from the heat. Crumble feta over the curried zucchini.

Filo pastry sheet

Step 6

Carefully remove the filo pastry sheet from the paper. (Potsticker sheets work well too!)

Step 7

Brush the surface of the sheet with oil.

Step 8

Spoon some of the filling onto one end of the oiled sheet.

Step 9

Starting with the filled end, roll the pastry sheet halfway. Fold in the edges, then continue rolling until you've made your first cigar!

Step 10

Repeat with the rest of the filling & pastry sheets.

Step 11

Heat a drizzle of olive oil in a pan over medium-high heat & add the cigars.

Step 12

Cook them for 2 min on each side, or until crisp & golden. Remove from heat.

Mixed baby greens

Step 13

Serve the curried cigars with the yogurt sauce & a bed of salad greens. Enjoy!
