This salad packs a lot of flavor & a lot of crunch! You'll almost forget you're eating a salad :-)
Stovetop, Knife, Frying pan
Step 1
Heat a drizzle of sesame oil in a pan on medium heat. Add the chicken to the pan & season with salt & pepper. Cook for 4-5 min on each side or until the chicken is nicely browned & fully cooked. Remove from the pan & set aside.
Step 2
Wash, dry & chop the romaine lettuce
Step 3
In a small bowl, grate the garlic & ginger. Add the rice vinegar, soy sauce, sesame oil & sesame seeds. Add a drizzle of honey for sweetness if you have any! Whisk thoroughly & set aside.
Step 4
To a bowl with romaine lettuce, add the coleslaw mix, drained mandarin orange segments & prepared dressing. Toss it all together.
Step 5
Serve the salad topped with the chicken. Add the crunchy chow mein noodles on top & garnish with additional sesame seeds. Enjoy!
