Make sure you have...
Stovetop, Pot (small), Colander, Frying pan, Parchment paper, Food processor, Knife
Step 1
Wash & chop the broccoli into florets. Cook the broccoli in a pot of salted boiling water for 5 min, or until fork-tender. Drain well. Add them to a food processor or blender.
Step 2
Pulse a few times to chop but not purée the broccoli.
Step 3
In a mixing bowl, combine the broccoli, eggs, flour, crumbled feta, salt & pepper. Mix it all together.
Step 4
Pour the bread crumbs into a shallow dish. Using your hands, roll the broccoli mixture into 1-inch balls. Then roll each ball in the bread crumbs.
Step 5
Gently press the veggie patties down.
Step 6
Heat a good drizzle of olive oil in a pan, over medium heat. Add the patties & cook for 3 min on each side.
Step 7
Season with salt & pepper. Serve with a side salad. Enjoy!
