Step 1

Preheat the oven to 400°F. On a sheet tray lined with parchment paper, add the frozen cauliflower & broccoli florets. Add a drizzle of olive oil & a pinch of salt & pepper. Toss to evenly coat. Roast in the oven for 15 min.

Ranch seasoning mix
Bread crumbs (panko)

Step 2

In a small bowl, combine the panko breadcrumbs with the ranch seasoning.

Salmon (fresh)
Mayonnaise

Step 3

Pat the salmon dry & spread the mayo overtop. Pat the breadcrumb mix over the mayo.

Cooking spray

Step 4

Remove the veggies from the oven & give them a stir. Redistribute the cauliflower & broccoli onto one side of the sheet tray. Add the salmon to the empty side. Spritz the salmon with cooking spray & return everything to the oven. Roast for 10-12 more min, until the panko is golden & the salmon is fully cooked.

Quinoa (cooked)

Step 5

Meanwhile, heat the quinoa according to package instructions. Remove the salmon & veggies from the oven. Serve everything on a plate with a side of quinoa. Enjoy!
