A gnocchi dish that the whole family will love!
Make sure you have...
Stovetop, Frying pan, Knife
Step 1
Heat a drizzle of olive oil in a pan on medium heat. Add the gnocchi. Stir & cook for 2-3 mins. Cover & continue cooking for 3-4 mins over low heat, until golden brown. Remove from the pan & set aside.
Step 2
Meanwhile, peel & thinly slice the red onion.
Step 3
In the same pan, heat another drizzle of olive oil over medium heat. Add the red onions & cherry tomatoes. Grate in the garlic. Season with salt & pepper. Stir to combine, then cover & cook for 5-6 mins on low heat.
Step 4
Once the cherry tomatoes have all burst, add the honey, basil (optional), & half of the goat cheese. Stir to combine.
Step 5
Add the gnocchi into the sauce & stir. Remove from the heat.
Step 6
Serve the gnocchi in a shallow dish topped with the prosciutto & the remaining goat cheese. Garnish with fresh basil (optional). Serve & enjoy!
