Make sure you have...
Stovetop, Pot (small), Knife
Step 1
Peel & mince the onion & garlic.
Step 2
Heat a drizzle of oil in a pot over medium-high heat. Add the onion & garlic. Sauté for 2 min. If you have extra time, try caramelizing the onions for a bit longer to bring out that rich flavor.
Step 3
Add the gnocchi. Sauté for 1-2 min. You can add a bit of butter to help with the browning!
Step 4
Pour the veggie broth into the pot (or use a bouillon cube & water!). Add the parmesan cheese & the sour cream. Season with salt & pepper. Stir it all together. Reduce the heat to low & simmer for 3-5 min. Add a splash of water to thin the consistency if you wish.
Step 5
Serve each bowl of soup with salt & pepper to taste. Top with chopped chives (optional) and shaved parmesan! Enjoy!
