Stovetop, Pot (small)
Peel & mince the onion & garlic.
Heat a drizzle of oil in a pot over medium-high heat. Add the onion & garlic. Sauté for 2 min.
Add the gnocchi. Sauté for 1-2 min. (Add a bit of butter if you like!)
Pour the veggie broth into the pot (or use a bouillon cube & water!). Add the sour cream. Season with salt & pepper. Stir it all together. Reduce the heat to low & simmer for 3-5 min. Add a splash of water if too thick.
Serve each bowl of soup garnished with grated parmesan & chopped chives (optional). Enjoy!
