Creamy Baked Eggs with Spinach and Bacon

Parmesan (grated)
Sour cream

Step 1

Preheat the oven to 400°F. In a bowl, mix together the grated parmesan cheese & sour cream. Season with salt & pepper.

Step 2

Butter a small baking dish. Add the sour cream mixture, spreading it in an even layer over the base of the dish.

Spinach (fresh)
Bacon

Step 3

Add the baby spinach leaves and 3 slices of uncooked bacon.

Step 4

Using the back of a spoon, make shallow holes around each bacon slice for the 3 eggs. Gently crack the eggs into each hole. Season all with salt & pepper. Optional: Add a pinch of cayenne pepper or red pepper flakes for heat.

Step 5

Bake for 15 minutes or until the eggs & bacon are cooked to your liking. Happy brunching!
