Sweet potato

Step 1

Preheat the oven to 400°F. Peel the sweet potatoes & cut into small cubes.

Zucchini

Step 2

Wash & halve the zucchini lengthwise. Slice into half moons, about 1/2 an inch thick.

Red onion

Step 3

Peel & slice the onion into wedges.

Thyme (dried)

Step 4

On a parchment-lined sheet tray, add the sweet potatoes, zucchini & red onion. Add a generous drizzle of olive oil. Season with salt, pepper & thyme. Toss everything to evenly coat. Bake for 30-35 min at 400°, flipping the veggies halfway through.

Cod (fresh)

Step 5

Heat a drizzle of olive oil in a pan over medium heat. Pat the cod fillet dry & add it to the pan. Season all over with salt & pepper. Pan fry for 2-3 min on each side until fully cooked.

Lemon

Step 6

Remove the veggies from the oven once golden & cooked through. Serve alongside the cod fillet. Squeeze the lemon over top & garnish with any fresh herbs you may have on hand! Enjoy!
