Step 1
Cook the rice according to the package instructions.

Peel & mince the shallot.
Step 3
Cut the chicken breast in half lengthwise to make 2 thin cutlets.

Fluff the cooked rice & keep it warm.

Heat a drizzle of olive oil in a pan over medium-high heat. Add the chicken, salt & pepper. Cook for 2-3 min on each side, or until cooked through.

Remove the chicken from the pan.

Add the shallot to the pan. Cook, stirring for 1-2 min.

Reduce the heat to medium-low. Add the coconut milk, salt, pepper & a drizzle of water. Bring it to a simmer.
Step 9
Add the chicken to the pan again. Stir in the spinach.
Step 10
Add the lime zest & juice. Stir to combine.
Step 11
Serve the chicken over fluffed rice. Pour the coconut-lime sauce over time. Garnish with fresh cilantro (optional). Enjoy!
