Cook the rice according to the package instructions.

Heat a drizzle of olive oil in a pan over medium heat. Add the chicken, onion & curry powder. Season with salt & pepper. Cook, stirring for 5 min.
Add the cherry tomatoes.
Pour in the coconut milk. Stir to combine. Reduce the heat to low, cover & simmer for 5 min.
Uncover & stir, adding a bit of water if needed.
Serve the chicken & coconut sauce over the rice. Garnish with fresh cilantro (optional). Enjoy!
