Cook the rice according to the package instructions.
Heat a drizzle of oil in a pan over medium heat. Add the mushrooms. Cook, stirring for 1 min.
Peel & thinly slice the onion.
Cut the chicken into strips.
Add the chicken, onion & another drizzle of olive oil to the pan.
Cook, stirring for 5 min.
Reduce the heat to low. Stir in the cream & mustard. Simmer for 5 min, or until the chicken is cooked through.
Season with salt & pepper.
Serve the chicken & mustard sauce over the rice. Enjoy!
