Step 1
Finely chop the pickles (optional). In a small bowl, combine Thousand Island dressing with the chopped pickles, or keep the dressing as it is.
Step 2
Peel & small dice the onion.
Step 3
Portion out the beef (about a 1/4 cup per taco) & loosely roll each portion into a small ball.
Step 4
On a flat surface, lay the tortillas. Press 1 portion of meat evenly on each tortilla. Spread the meat close to the edges. Season with salt & pepper.
Step 5
Heat a drizzle of olive oil on a pan over medium-high heat. Sear each taco, meat side down on the pan, for about 2-3 min, or until nicely browned. Use a flat-edge spatula to flip each taco & cook for 1 more min, until the tortilla is slightly charred.
Step 6
Reduce the heat. Top each taco with a slice of American cheese. Cover the pan for 1 min to melt. Repeat the process with the remaining tacos.
Step 7
Serve the cheeseburger tacos topped with chopped onions, shredded lettuce & a drizzle of the special dressing! Enjoy with more pickles if you have!
