Step 1
Peel & thinly slice the onions.
Step 2
Melt a dab of butter in a pan on medium heat & add the red onions. Add a splash of water into the pan, cover & cook the onions for 8-10 min. Uncover, stir & repeat as needed!
Step 3
Meanwhile, in a second pan on medium-high heat, add the bacon slices. Cook for 2-3 min on each side or until crispy. Remove the bacon & place on a paper towel lined plate.
Step 4
In the same pan, melt a dab of butter. Toast the buns, cut-side down, in the pan for 1-2 min over high heat.
Step 5
Once the onions are caramelized, set aside.
Step 6
In the same pan, heat a drizzle of olive oil. Add the burger patties & season with salt & pepper. Cook for 2-3 min, then flip & cook for another 2-3 min (cook for 2-3 min longer if you desire a medium-well or well-done burger). Add the cheese. Cover & cook for 1 min or until the cheese is melted.
Step 7
Spread the mustard onto the the bottom burger bun. Layer on the patty, top with the caramelized onions, bacon & lettuce. Serve & enjoy!
